this week i finally spent some long overdue time posting my blog posts. as much as i love a beautifully organised blog, the reality of my life is that:
a) i am one of the least naturally hardworking people i know.
b) my life is revolved around the man and our girl, the man and our girl, the man and our girl.
c) my brain shuts off faster than i know
so needless to say, my blog can turn into a bit of a neglected jungle.
anyway tonight i made a pot of five ingredients brocolli cheese soup which was a hit with alexis :) she globbled her bowl clean which pleased me much. this is definitely one of her favorite cream soup. it is quick, it can usually be made with simple staples i keep on hand, it is a really inexpensive meal, and it is fresh and healthy. but more than that, it is super delicious with the extra kick of cheddar in there. i toasted some garlic bread as a carbo side.
definitely a yummy way to pump in lots of green brocolli and enjoy some cozy comfort food in the process.

3 cups vegetable stock
2 cups chopped broccoli florets
1 white onion, diced
1 can evaporated milk
2 cups shredded cheddar cheese
stir together stock, diced onion and broccoli in a pot. heat over medium heat until it comes to a low boil. reduce heat to medium and continue boiling for about 5 minutes, or until the onions and brocolli are tender. stir in the evaporated milk and continue cooking for 3 minutes or until the mixture returns to a simmer. remove from heat and stir in the cheese until melted.
serve warm.
