alexis is a mindchamp

nine more days, alexis is going to school! suddenly i feel such a longing to cradle her tightly and reminisce those good old baby days.

what i want to be when i grow up

i am always inspired by food blogs. however these days, i am more inspired by vegan food blogs focusing on using natural, whole foods to create healthy recipes. truth be told, i have never stopped dreaming or thinking.

chia seed pudding breakfast

i had read that chia seed pudding made a particularly fine breakfast and dessert. for alexis's breakfast today, i went with a simple custard-like pudding that turned out even better than i imagined. chia seed pudding is tapioca-like and they puff up into little pearls as they soak, contributing a pleasing texture to this vegetarian and vegan-friendly delight. it might not be the prettiest pudding, but one of the healthiest one, in my humble opinion. i was looking for a hint of sweetness without adding sugar. the small one-serving size of strawberry flavored yogurt sitting in the fridge was all that she needed :)

•chia seed has more omega 3′s than a 4oz piece of salmon.
•chia seed has 12g of fiber
•chia seed is a natural appetite suppressant. She swells to 10 times her size when exposed to fluid
•chia seed has the same amount of protein as one egg
•chia seed is gluten free and dairy free
•chia seed is rich in B vitamins and magnesium (nutrients required to counter stress)

chia seed pudding
i soaked 1.5 tablespoons of chia seed in 1/4 cup of formula milk overnight and added yogurt as topping. viola! a beautiful and nutritionally complex pudding breakfast :)

and yes, the man and i will start on chia-seeding too! chia seed gel is great as a egg replacer too, i have been using this egg replacer during my recent bakes :)

chickpea brownies

chickpea brownies - brownies packed with healthy beans.
alexis vouches for it's deliciousness :)

chickpea brownies
250g cooked chickpeas
3/4 tsp baking powder
1/8 tsp baking soda
3/4 cup brown sugar
1 tsp vanilla extract
1/4 cup rolled oats
1/4 cup peanut butter
1/2 cup cranberries or chocolate chips or a mixture of both

preheat oven to 180 degrees. blend all ingredients, except berries and chips until very smooth in a food processor. fold in berries and/or chips, and scoop into a greased brownie pan. bake for around 30 minutes :)

i'm going to dream

for the longest time, i was as lost as a lamb. i have never been strong with harsh reality. i wander blindly and take shelter in shades of grey. i will love to stay hidden forever. i do not want to be discovered. i love this dream world of stories i paint. i am who i am today because of these dream state wonderlands.
